Blueberry Apple Crumb Crunchy Trail Mix Bars made using our Crunchy Trail Mix Cereal with Organic Sp

Our Apple Crunchy Trail Mix bars were such a hit, we looked for a way to amp up the recipe, and was inspired by Mae Santos to add blueberry to our recipe. Using our Sunningdale Mills Crunchy Trail Mix Cereal with Organic Sprouted Grains that includesOrganic Rolled Oats, Organic Sprouted Buckwheat, Organic Cinnamon, Organic Sprouted Sunflower Seeds, Organic Brown Flax, Organic Chia, Organic Pumpkin Seeds , and with a fresh blueberry/apple mix adds a tasty variation to to this treat!

Crust & Topping Ingredients - makes 12 – 14 bars

1 1/2 cups Crunchy Trail Mix Cereal with Organic Sprouted Grains

3/4 cup brown sugar

3/4 cup softened butter or dairy-free alternative

1 1/2 cups flour

1 tsp. baking powder

1/4 tsp. salt

Filling

1 1/2 cups of sliced apples

3 cups blueberries (fresh or frozen)

1/2 cup granulated sugar

1/4 cup orange juice

4 tsp. cornstarch

Directions

1. Preheat oven to 375 F, while heating prepare the blueberry filling

2. Combine blueberries, sugar and orange juice into medium saucepan over medium heat and bring to a boil for 1 minute, then whisk for 1 minute. Combine the cornstarch with 3-4 tsp. of warm water until dissolved. Add corn-starch mix to blueberries and simmer for 3-4 minutes until mixture thickened. Remove from heat and allow cooling while baking crust.

3. Coat the inside of 8 x 8 in. cooking pan with cooking spray or tin foil to prevent sticking.

4. Cream together the butter and brown sugar in a medium bowl, then fold in the flour, Crunchy Trail Mix, baking powder and salt. Pour 1/2 of the mixture into the pan and press flat. Place in oven to bake for 10 minutes.

5. Remove crust from oven after 10 minutes, cover with blueberry mixture, then spread the apple slices evenly over the over the blueberry base, covering the mixture with the remaining mixture as a crumble on top.

6. Cook for 35 to 45 minutes. Allow to cool fully, then cut into squares, and enjoy!
