Mediterranean Sprouted Rice & Lentil Harvest Blend Pilaf

If you are looking for a tasty side dish for your Thanksgiving dinner this weekend, today’s vegan friendly recipe is inspired by the Mediterranean Rice Pilaf recipe from All Recipes Canada, using Organic Sprouted Rice & Lentil Harvest Blend. All the ingredients are at Remark Fresh Markets in London.

Ingredients - serves 6

1 1/2 cups vegetable broth

2 Tbsp. virgin Olive Oil

1/4 cup almond slivers

1/4 cup raisins

2 1/4 tsp. soy sauce

3/4 tsp. curry powder

1/2 tsp. ground turmeric

1/2 cup pineapple chunks (drained)

Directions

  1. Heat the vegetable broth until boiling, and then add rice, almonds, raisins, oil, soy sauce, curry powder and turmeric.

  2. Stir to combine and reduce heat to simmer, until all of the rice & lentils absorb the liquid (approximately 15 – 20 mins).

  3. Stir in the pineapple and then serve!
