Apple Crunchy Trail Mix Bars made using our Crunchy Trail Mix Cereal with Organic Sprouted Grains

Fall in Southern Ontario is a wonderful time of year, the days are cooler, leaves are changing colour and our Sunningdale Mills kitchen has been filled with smells of pumpkin, spices and today we are enjoying the wonderful aroma of apples and cinnamon. Today’s recipe was inspired by these Chewy Apple Oatmeal Bars from Veggie Balance and is made with our Crunchy Trail Mix Cereal with Organic Sprouted Grains. All of the ingredients are available at Remark Fresh Markets in London.

Sunningdale Mills Crunchy Trail Mix Cereal with Organic Sprouted Grains has Organic Rolled Oats, and Organic Sprouted Buckwheat, that are perfect for this recipe, along with the great flavour and aroma of Organic Cinnamon. The organic sprouted seeds in our cereal, Organic Sprouted Sunflower Seeds, Organic Brown Flax, Organic Chia, Organic Pumpkin Seeds add a nice crunch to this treat!

Ingredients - makes 12 – 14 bars

1 1/2 cups Crunchy Trail Mix Cereal with Organic Sprouted Grains

3/4 cup brown sugar

3/4 cup softened butter/ for vegan friendly use dairy-free alternative

1 1/2 cups flour

1 tsp. baking powder

1/4 tsp. salt

1 cup of apple butter

Directions

1. Preheat oven to 350 F

2. Coat the inside of 8 x 8 in. cooking pan with cooking spray to prevent sticking.

3. Cream together the butter and brown sugar in a medium bowl, then fold in the flour, Crunchy Trail Mix, baking powder and salt

4. Pour 1/2 of the mixture into the pan and press flat. Then spread the apple butter over the prepared base, covering the apple butter with the remaining mixture as a crumble on top

5. Cook for 30 to 40 minutes. Allow to cool fully, then cut into squares, and for fun add a favourite topping!
