Today is the last day of Whole Grains Month from The Whole Grains Council. Our recipe today is using our Organic Sprouted Brown Rice.
As noted by Organic Facts the process of germinating or sprouting rice adds many nutritional benefits and sprouted brown rice is high in nutritional value due to the presence of gama-aminobutyric acid (GABA). We sprout our organic brown rice and capture it at the precise best moment to retain the maximum amount of GABA and elevated levels of protein and good enzymes. Our sprouting process also leads to significant increase in essential nutrients and vitamins such as, magnesium, potassium, vitamin, niacin, vitamin B6, thiamine and dietary fibre. All of these nutrients aid our bodies in better absorption during digestion and reduce intestinal inflammations.
Today’s plant-based and vegan recipe is inspired by this Asparagus and Ginger Fried Rice recipe from The Whole Grains Council site and using Sunningdale Mills Organic Sprouted Brown Rice. All the ingredients are at Remark Fresh Markets in London.
Ingredients - serves 4
1 1/2 cups cooked Sunningdale Mills Organic Sprouted Brown Rice
2 Tbsp. peanut oil
2 Tbsp. fresh or minced ginger
1/2 lb. asparagus cut into 1 inch lengths
1 Tbsp. soy sauce
salt and pepper to taste
Directions
Pre-cook the brown rice and set aside.
Heat a wok to medium-high heat until a bead of water sizzles and evaporate on contact. Add 1 Tbsp. of the oil and swirl to coat the base of the wok. Add the ginger, green onions and asparagus until the asparagus is tender and crisp, about 3 minutes.
Add remaining peanut oil to the wok, toss in the rice and sure all lumps are broken up. Continue to stir-fry until the rice is golden, about 2 mins. Add soy sauce and stir until well mixed with the rice. Season to taste with sale and pepper and serve!
