This Vegan Mexican Rice and Lentils recipe from Bites of Wellness inspired today’s recipe using Organic Sprouted Rice & Lentil Harvest Blend. All the ingredients are at Remark Fresh Markets in London.
Ingredients - serves 4
1 cup Sunningdale Mills Organic Sprouted Rice and Lentil Harvest Blend
2 2/3 cups vegetable broth
1 cup salsa of your choice
1 Tbsp. ground cumin
1 tsp. dark chilli powder
1/2 tsp. salt
a pinch of cayenne pepper
Taco chips
Guacamole
Directions
Place the Rice and Lentil Harvest Blend in a large pot and add the vegetable broth. Cook on high heat until boiling, then reduce heat and simmer until vegetable broth has been absorbed
While the Sprouted Rice & Lentil Harvest Blend is cooking, mix together the salsa, cumin chilli powder, salt and cayenne pepper.
Once the Rice & Lentil Harvest Blend has absorbed the vegetable broth, add the salsa mix. Serve with taco chips and guacamole for a great Mexican taco dinner!
